Delightful Delectables- Strawberry Sunshine Topping

Last week I promised you the recipe I used to make some of the softest and sweetest strawberry toppings for my s'mores cake and here it is... are you excited? You should be! It's like a ray of sunshine on your cake!

Those delicious berries couple amazingly with our Ted Williams Chocolate coffee cake, on top of a pan of brownies, a bowl of ice cream, or just on a spoon, as I ate them.


So... How to bring the above deliciousness to life:



Preheat the oven to 450 degrees F

Take...
1 quart strawberries (hulled and quartered)
1/4 cup sugar
1/4 tsp vanilla extract

Combine all in a mixing bowl...
Spread onto a rimmed baking sheet (I covered mine with aluminum foil to avoid a mess).
Bake 15 - 20 minutes until the strawberries are soft and tender. 
Allow to cool. 

Then you can cover your cake...


eat it as a delicious dessert...


 Or line the center of your s'more cake with them. The soft strawberries in the middle of the cake brought a unique texture and flavor that livened up the cake and was such a hit! You don't even need a s'mores cake to make this work!

Just make sure to double the above recipe if you are filling the inside of a cake and topping it as well, which I definitely advise. It's too good not to!
