Delicious Delectables- Springtime Coconut Nests

I made these nests for Easter, but I honestly think they make the perfect cookie or cake topper for any day you want to celebrate Spring.


They are perfect for cake toppers, cookies, or just little decorations (okay, maybe not long-term, but my friends thought they were adorable)! So follow along to make your own little Easter/Spring/coconut celebratory nests. They are quick and easy!



First things first, pull together your ingredients: 

2 large egg whites
2 cups of shredded and sweetened coconut
1/3 cup granulated sugar
2 tbsp all-purpose flour
1/2 tsp vanilla extract
1/8 tsp salt

Then preheat your oven to 325F and lightly grease and flour a baking sheet. 

Now let's get started. Crack your two egg whites into a medium bowl and whisk until frothy. I love to use the water bottle trick to separate egg yolks and whites.


Stir the coconut flakes, sugar, flour, vanilla extract and salt into the frothy egg whites until it is all well-blended. I found it easiest to just mush it all up with my hands, not the cleanest way to do it, but it gets the job done.


Drop the mixture by tablespoonfuls into mounds about 1 inch apart. Press the centers in slightly to shape them like nests.

Bake for about 20 minutes, or until set and lightly golden brown. Let cool for 5 minutes. Then press Robins Eggs into the middle depression as if they are bird eggs in the nest. Let fully cool, place on top of or around cake, and enjoy!
