What is your favorite thing about Fall (or Autumn, as we fancy people call it)? I really can't decide.

I love all of it! And I've decided that this Fall I am going to share my favorites with you (along with cake, of course!) and I am starting that off this week with...
Caramelized apples and coffee cake!

I started this week's Autumn Adventure with a trip to Eckert's Farm in Belleville, IL (about 45 minutes out of St. Louis). They have a host of amazing Autumn activities as well as year-round ones, but my adventures were in apple picking.
I came home with some Red Delicious and Granny Smith apples and got to work making them into a cake-topping treat of my own creation.
Caramelized Apple Recipe:
I first sliced one of each apple into wedges about 1/2" thick. This made enough to generously top four My Grandma's mini coffee cakes or to adequately top about eight of them.
I then set them on the stove. I was experimenting for myself on this one, so the Granny Smith apple got some butter (about 1.5 tsp), a sprinkling of sugar, and about 20 minutes on medium-high heat on the stove (until brown).

And the Red Delicious got the same amount of butter and stove time, but I swapped out the sugar for about 2 tsp of honey.

Both turned out delicious and complemented the mini coffee cakes perfectly!
Some friends of mine spent the entire day ready to pounce on those cakes. I could keep describing their antics, but I feel like this picture is worth a thousand descriptive terms:
When they finally did get a chance to eat the cakes (Granny Smith paired with a delicious Pumpkin mini coffee cake and Red Delicious with our special QVC Apple Cranberry flavor) I was told that they were not only delicious, but "next level" and "buttery and moist."
Not bad for 30 minutes of work!
