Delicious Delectables- Lemon Curd Coffee Cake

I discovered a new dessert topping! I don't know if you are aware of the power of lemon curd, but I was blissfully naive about this delicious topping until very recently.

Last week I found myself sitting around trying to decide what I should blog about next when I thought it might be fun to get some new opinions in the conversation, and boy was that a good idea! Quite a few ideas were raised (that you will be seeing soon on this blog), but one idea made my friend Sankalp SO excited that I had no choice but to help him make it come to life. What was this idea?

Lemon curd and coffee cake! 


"Lemon curd" you say? "That won't go well with coffee cake!" Well when I started this I have to say that I had my doubts, too. But I trusted in Sankalp's judgement, and boy did it pay off!



Lemon curd on top of a My Grandma's Cinnamon Walnut Coffee Cake was just the treat we needed to make every bite of our 8" coffee cake new and exciting in addition to the expected deliciousness. Even though it's hard to improve upon seeming perfection, this proved to be the ideal mix of traditional and new.

As much as Sankalp was a whiz in the kitchen making this curd (it is a process that involves a little patience, despite how easy it can be), I am sure that we are not the best resources online to teach you how to make this. So I will refer you to the recipe that we used (it even includes a video!) to be able to make this scrumptious spread for yourself. Happy baking!


Now since I have so many friends eagerly awaiting (begging for) a taste of coffee cake, I sometimes have to ask for blog help in exchange for a slice in order to make sure there's enough cake to go around. 

As a result, we did a little photo shoot for you, and although you can tell that these pics are a bit staged, that last one was taken about 30 seconds after I told them that they could eat up. I don't think it's possible to fake cake disappearing that fast!
